Favorite Grill Recipe

Grilled Sweet Potatoes w/Chipotle Honey Sauce

Ingredients:
Grilled Sweet Potatoes

. 6 med. sweet potatoes
. 1/3 cup olive or vegetable oil
. 2 tsp. coarse salt (I use Kosher for all my cooking)

Chipotle Honey Sauce

. 1 cup honey
. 1/2 cup BBQ Sauce
. 1/2 tsp. of Chipotle Seasoning

Directions:

Grilled Sweet Potatoes

1. Spray rill rack with cooking spray. Heat coals or gas grill for direct heat. Make the Chipotle Honey Sauce (see below).

2. Cut each sweet potato lengthwise into 4-5 slices; brush both sides with oil. Place on grill rack; sprinkle with 1 teaspoon of salt.

3. Cover and grill 4-6 inches from med. heat for 8-10 minutes, turning once and sprinkling with remaining salt, until potatoes are tender. Serve with the sauce.

Chipotle Honey Sauce

This can be made more spicy by adjusting the amount of seasoning to your liking. This sauce is great on pork, chicken, beef, meatballs; and used as dipping sauce or basting sauce. I can just taste a good beef brisket with this sauce on it..... yum.
